Hi,
I would like to set up pre-orders on my plak theme product page for a specific size. For example : if the a variant X is out of stock i would like to display (preorder) where the visitor can enteir its email to preorder it.
I hope this make sense.

Since you would like to have a preorder button where you'll want to gather emails from visitors, it is better to use an app in this case
Although there are lot of apps available in the Shopify App store that could provide you with the functionality you're looking for, I would recommend checking out the following apps:
Note : We have added to our list (pre-order template) that we might develop in one of our future releases 🙂
